Kale Salads

I've got a slight obsession with kale salads going on. I think it's something about the tougher texture of kale leaves and how perfectly it pairs with parm (my fav, can you tell?) . I've tried my fair share of them throughout the city, and I think the version at Barbuto takes the cake. The salad is reminiscent of a Caesar, with tangy (but not too overpowering) anchovy dressing and lots of pecorino. [side note: those potatoes pictured below from my meal at Barbuto were also out of this world!]

Barbuto is located at 775 Washington Street in Manhattan's West Village. The restaurant is known for its roast chicken dish (also pictured above) but if you go, trust me and try the kale salad too!

At home I mostly cook kale, but I want to try to make some salads myself. Here are three recipes I'm bookmarking:
